Baked White Rice

This is a no-fuss way of making fluffy white rice that comes out perfect for us every time!
Baked White Rice
Spray an 8x8 glass baking dish with olive oil.
Drop 2 Tbsp of Coconut Oil in the pan.
Sprinkle 1 cup of White Rice evenly in the pan.
Pour 2 1/4 cups of boiling water over the top of the rice.
Cover with foil.
Bake at 350° for 40-50 minutes.
Test rice for doneness and to be sure all the water has been incorporated into the rice.
Fluff with a fork.
Transfer to serving dish.
Store leftovers in the refrigerator.
