Crazy Cake, a.k.a. Depression Cake
Crazy Cake, also known as Depression Cake, originated during the Great Depression in the 1930s.
With ingredients in short supply and rationed, home bakers had to get creative with their recipes.
This cake omits eggs, milk, and butter—basic staples that were difficult to obtain during that time—relying instead on simple pantry ingredients like flour, sugar, vinegar, and cocoa powder.
The name "Crazy Cake" is believed to reflect the unconventional, eggless preparation, while "Depression Cake" highlights its historical context as a practical and affordable dessert for families facing economic hardship.
Despite its humble origins, it remains a popular, nostalgic treat, and it is definitely one of our favorites!
Crazy Cake
Sift together:
1 1/2 c. organic flour ( Not bleached or enriched!)
1 c. vegan white sugar (We use Pioneer brand.)
1/3 c. organic cocoa
1 t. baking soda
1 t. salt
Make 3 wells in the dry ingredients.
Pour into the wells:
1 T. vinegar
2 t. vanilla
1/3 c. olive or avocado oil
Pour over the top:
1 c. water (We use Ozarka.)
Quickly mix with a whisk.
Pour into greased 9x9" pan.
Bake at 350° for 25 - 30 minutes, or until a toothpick inserted in the center comes out clean.
Cool.
Frosting
1 stick plant butter
2 1/2 c. vegan powdered sugar (We use Pioneer brand.)
1 t. vanilla
1 T. water (More, if needed.)
Use a mixer to blend well.
Spread on cooled cake.
Enjoy every bite!
