Quinoa and Black Beans, Alpha Gal Friendly, Dairy Free, Gluten Free

It's a complete protein, meaning it contains all nine essential amino acids, making it an excellent plant-based protein source for vegetarians and vegans.
Quinoa is rich in fiber, which aids digestion and helps maintain healthy blood sugar levels.
It’s also packed with vitamins and minerals, including magnesium, iron, and B vitamins, supporting overall health.
Quinoa is gluten-free, making it a safe alternative for those with gluten sensitivities.
Additionally, it has antioxidant properties that help reduce inflammation and protect against oxidative stress, promoting long-term wellness.
Quinoa and Black Beans
Cook as directed on package:
1 cup Organic Quinoa
2 cups Organic Vegetable Broth
Saute onion till translucent:
1 Onion, Chopped
Add to onion and saute lightly:
1 Tbsp Minced Garlic
Add and saute until fragrant:
1 tsp Ground Cumin
Additional Seasonings As Desired
Add and heat through:
1 15 oz can Organic Black Beans, Drained and Rinsed
1 15 oz can Organic Whole Kernel Corn, Drained and Rinsed
Toss with warm, cooked Quinoa.
Sprinkle with:
Chopped Cilantro (Optional)
This makes a fairly large batch, and we always have leftovers.
If you can have eggs, this is great the next morning with an over-easy fried egg on top!
